Where skid plate dose prevent some of the debris (very little) to get in to the engine bay, it main priority is to keep the oil pan in one piece.
Notice on pictures below, both lancer (Kevlar) and golf (aluminum) had plate protected floor pan - it isn't there to keep the mud out.
I use a 3/16" because that is what I could locate in the world of scrap aluminum.
My skid plate is a little bit wider than the one on the picture below. It mounts to the sub frame with six bolts it's also offset to one side to protect the power steering pump and belts on the side of the motor. I made sure my clearances are at least 1" under hard objects (things that wont bend nicely) like the bell housing, tranny and pulleys, and 1/2" under things that can take some limited abuse like the steel oil pan.
We had run Rocky without the skid plate and a "water maybe" that was only a big hole in the road had modified the oil pan and reduce its capacity by about a liter. Steel oil pan has some advantage over an aluminum that would crack and put us out of the race.
With the 1.8 T going into the car we will always run plate under the aluminum oil pan.
Steel - extra 30 pounds will cost you some Hp
UHMW - just as good as aluminum just make sure you have plenty off clearance especially from the exhaust , unless you like sniffing the fumes.
