Worth while checking the flow too/from the fuel tank.
It's possible your stalling is fuel starvation.

Not sure if this would cause your symptoms. I do have a 109 in my toolbox though if you want to try it.

Haven't had the problem come back at all since I changed my timing belt, and cleaned the build up out of my intake manifold/egr.

I was going to say carbon build-up reading through here, it's a common problem that can give weird symptoms.

Never had the check engine light come on that I remember, but it's all good now !
