I've taken a second look at the rims and by installing the inside of the rear rims on the outer edge I can gain 11mm by doing this.
17x8.5 ET30 front
17x8.5 ET18+11 = ET29 rear
With the 20mm adapters I end up with:
17x8.5 ET10 front
17x8.5 ET9 rear
If I can find 15mm adapters I'll sit a better:
17x8.5 ET15 front
17x8.5 ET14 rear
I am thinking I should get 215/40/17 tires, but was wondering how much those might rub? Also what will the difference from the base of the tire to the tread part?
I'd like to keep it as flat as possible, without that space between the edge of the rim and the edge of the tire, should I go a size bigger maybe?
