That's stock size tire on 17" wheels on a mk4 (assuming you have a mk4). My winter wheels have this size tire and I don't have any issues, although I do have 2 degrees more negative camber in the front than stock.
i was pretty low with my 17" LBs, no rubbing issues in the front, but I ran 20mm spacers in the rear and rubbed if i hit a good bump going fast... but usually only if i had 3 or more people in the car
I agree on spacers. et35 is stock on a Xx7.5 and it sits in just a bit. With a drop it actually pulls the front wheels in due to the control arm angle. I dont know offsets and flushness for a 7.5" wheel but i can experiment this weekend with my winters before i swap them over to my summers. I also have air so i can set it at a 2" drop so it is what you are looking for. My initial guess is that 20mm front and 30mm back will bring you out to almost flush but still tucked in enough to prevent rubbing around corners.
