Just came across a few articles like this on jalopnik, found it to be pretty interesting

What are the best places in Canada to have some weekend fun without the increasingly annoying cops?
Twisties, high speed runs or even just nice views?
For me theres a few:
1. Highway 1A Cochrane to Canmore, few cops and traffic, some nice turns, can go pretty fast in some straights.
2. 97A Sicamous to Grindrod, traffic may be annoying at day time, few cops, awesome twisties and scenery.
3. Sea to sky highway from North Vancouver to Whistler, not many places for cops to hide, fast and good turns(but you probably won't go too fast on it), scenery is amazing, don't go on a weekend.
4. Highway 5 from Merritt to Hope, one of my favourite roads, 120 speed limit, few cops, great scenery and turns, and quite a few places to safely go much quicker, 13-15 is generally a pretty good speed on the road although you do want to slow down in some sections, 2-3 hours of pure fun. Just watch out for trucks at night time.
5. 99-->97 from Whistler to Cache Creek, one of the most amazing roads I've ever been to, hands down my favorite. I highly recommend staying at Whistler overnight and leaving early morning 6AM in mid summer, the scenery left me speechless, and the variety of sceneries and landscapes is nothing but impressive. Absolutely no police around, and very few travellers. The speed limit is 50-80 but it's one of those roads you'll enjoy even without speeding.
6. Any flat straight range roads 30 min outside of the cities in Alberta, one where you can see miles ahead of you, you know what they're for
If you haven't tried some of these yet, especially #5, you are missing out and it should be on your summer vacation list! And feel free to add to the list!
