    dj i don't bbq steaks anymore.. pan fry then oven style for the best steak you can get trust me on that

    yea i love yard work too.. you should come help build my deck when i get back booze and yardwork go hand in hand

          Ryan, i'll for sure help you with your deck!!! keep me in the loop, that'll be fun. remember, i'm czeck and scottish so i work better the more FUEL you give me *cough* beer *cough*

          i'm curoius about pan fry and baked steaks. i have quite a bit of meat left from the cow that i bought, and i don't eat meat quick enough. i'm a seafood nut most of the year. that's how i keep my sexy merman figure. oh no, fuel for luunta.

          give me more info on the steak panfry/oven please!

            It's just called a green egg. It's a heavy ceramic bbq that can go from about 200deg up to around 1000. You basically buy wood to put in it and control the temp via air supply.

            because it holds the heat really good you can turn it way down and cook ribs and such in it all day, plus the natural wood gives it a unique flavour over gas.

              total hijack but pan fry recipe.. this is how the majority of restaurants will cook your steak and thats why the outside always has that wicked crust on it

              take 2 of your favorite steaks .. oh this really only works well on bone out steaks such as NYs or sirloins.. anything with a bone BBQ still.
              okay so take 2 steaks.. get them to room temperature
              lightly coat with extra virgin olive oil
              use a salt and pepper grinder and salt/pepper each steak
              you can use montreal steak spice too and just push it in with your hands
              do this to both sides of steak

              anyways
              preheat oven to 500degrees
              get a good fry pan (not a nonstick one.. but stainless steel or cast iron)
              put it on the stove.. heat to high
              once pan starts getting pretty hot
              take a big glob of butter (salted) and toss it into the pan and stir around quickly as it'll melt fast
              drop steaks into pan and let the sizzle hit!
              let each steak cook in the pan for roughly 30-45seconds per side this will sear the outside of the steak.
              flip after 30 and let second side cook.. after 30-45 toss the entire pan into the oven
              now this is a learning part but depending on how you like your steaks or how thick they are will warrant cooking time
              but i do mine that are say 1-1.5" thick for about 2minutes/side in the oven
              so toss the pan in the oven. let them cook for 2-3 minutes.
              pull pan out with glove on and flip steaks
              put back into oven for a remaininng 2-3 minutes
              pull pan from oven

              put steaks onto plate and drain butter/juices over steaks

              MOST IMPORTANT PART
              now take the plate and cover it completely in tin foil for about 5 minutes
              this lets the steaks rest so all the blood comes out but the steaks stay juicy
              if you don't let them rest enough they will be all bloody when you eat them
              also resting steaks they are actually cooking underneath the tinfoil still

              so thats why i say depending on how you like your steaks warrants oven time. i like mine medium rare so 2minutes per side in the oven does the trick for me

              ps.. before you put your steaks into the oven in the pan feel free to toss in red/orange/green peppers or mushrooms,etc into the butter mess as they'll flash fry in the butter and turn out fantastic

              and also this technique does actually work on a BBQ
              same technique just no pan.
              prep steaks the same
              preheat BBQ to F"in HOT
              toss steaks on bbq for about 2-3 minutes per side and thats it .. pull them off and let them rest.
              you'll get those gnarly grill lines in it if you do it right

              thats it..

                wow ryan, that sounds fantastic! when i make stir fry's.. i will slice the steak when it's raw and then pan fry it with some spice.

                your method is out of this world. i'm going to try it tomorrow as i wont' be home for dinner tonight. i'm real excited! i like your idea of putting mushrooms and peppers in with the steak at the same time in the pan. that's fantastic

                    ya the butter is what makes them so damn good.. just kinda guess how much you want to use.. this is the exact way ruth chris' steak house cooks their steaks

                      i cook a lot and love it. but ppl are usually surprised to hear that i don't ever cook with butter. i'll sometimes use skim milk, but never butter. i also don't fry very much and if i do, it's on a low heat setting or if it's high heat then i use lots of water.

                      so that being said, i don't have much experience with butter because i don't like the taste. but i'm gonna give it a shot. i'll try it with a very small ammount first and see how that turns out.

                      sometimes i enjoy butter on bread, but in food it makes me mentally ill. not sure why


                      Luunta, how do you cook a steak with a butane lighter?

                        yea use about 1tablespoon and go from there

                        if you've been to some steakhouses before they put seriously an ice cream scoop of garlic or spiced butter ontop of a steak when it comes out.. sounds sick but F me its good.. not so good on the veins tho

                          HAHA really? i can see that! i usually eat a burger or seafood when i eat out. If i do eat a steak, my stomach is not happy that evening. sometimes requires a little bathroom time! i love dairy but i don't know why butter effects me.

                          does butter work differently being digested then ice cream or milk? because i eat ice cream daily yummmmmmmmmmmmmm!!!

                            butter on steak is like.. vagina's on women.

                            you can't have them without it. it's absolutely awesome. ryan is correct in his presentation of how to cook a steak. although I prefer strictly pan fried, myself. having trouble adjusting to my new stove top. it doesn't heat like gas does. lame.

                              eak. i got this new fountain i had been working on. i put it out on my steps next to the door. it's got water circulating through it and some rocks, as well as water conditioner...

                              i hear my mailbox open so i went to the door to check the mail. the mail dude just finished dipping his hand into the fountain and taking a big gulp of the water. he must have been really hot to drink that. ewwww
