K-line shouldn't be connected if it's in the factory harness, sometimes metra ties it to power antenna.
do you have an accessory line on the factory deck?? some VW cars don't have that function, and now turn on the stereo through the CAN bus.

looking at that diagram you don't have an accessory line (ignition signal)
you will need to grab that from the fusebox, and connect it up.
        put.......put.......

this is what the metra harness looks like:

So i'm thinking ill only be able to use the direct 12 volt and ground... The other two, the illumination and the switched 12v, i'll have to track down elsewhere... does that sound right?

How would i move those pins around?

            yes that sounds right.

it's not worth the effort moving pins in the metra connector around unless you're also rewiring the factory side of the harness. just cut the wire off on the metra side of the connector.
but if you really must, there is a barb like tang in the connector pin. look into the connector from the front (not wire side) and there should be a little piece of metal from the pin bent out so it doesn't back out. use a small jewellers screwdriver (or similar) to bend it back, then the wire will pop out the back. well that's a bad explanation/description, but hopfully it makes sense when you look at it.

for illumination you should be able to tap off the guage/switch illumination (heater switches or hazard light switch).

ignition - fuse box, don't know which fuse...test light or multimeter on fuses, see which fuse loses power when key is pulled out, after you shut it off. narrow down fuse selection by looking at fuse legend.

awesome, so all in all im going to be looking for three wires to tap, illumination, 12v switched, and a speed signal. Magical. This might take a while.
