What size tires would I have to use to maintain the same rolling diameter,
    17x8.5 and 17x10, without it looking goofy on a b6 a4?
Could I stretch 225 or 235 all around?

Or do I forget about staggered wheels completely?!

As long as you keep the diameters within 3% you should be good. I used a tire size calculator when trying to figure mine out and ended up going with a 215/45r18 on 8/9" wheels

Staggered wheels (with fronts smaller than rears) only serves to increase understeer.

The MTM RSR used reversed stagger (bigger tyres up front) to cure the front end pushing into corners

Otherwise use the tire calc linked above (same one I use), and so long as you're within 3-4% you're fine.

Well I test fit the wheels with 235/45 around, and they just look goofy. So I'm just going to sell the wheels.

Well thats the reason, you should try a 205/45 in the fronts

            you need in front:
            225/45/17
            rear:
            245/40/17
